Roxie’s Recipes (for the Lazy Cook)

During times of stress I often find that baking can be therapeutic. Once again I’ve combined a few different recipes I found to create this carrot spice cake with a twist (of orange). Tastes great served with a nice relaxing cup of herbal tea.

Cake:

  • 2 cups flour
  • 1 cup sugar
  • ¾ cup brown sugar
  • 1½ tsp baking soda
  • 1 tsp baking powder
  • 2 tsp cinnamon, ground
  • ½ tsp nutmeg
  • ¼ tsp cloves, ground
  • ¼ tsp ginger, ground
  • 3 cups carrots, shredded
  • 4 oz applesauce
  • 3 eggs
  • ¾ cup vegetable oil
  • 2 tsp vanilla extract

Filling:

  • 8 oz cream cheese, softened
  • 1 egg
  • ¼ cup sugar
  • 1 tsp vanilla

Frosting:

  • 4 oz cream cheese, softened
  • 1 egg
  • ½ cup confectioners sugar
  • ¼ tsp orange zest
  1. Preheat oven to 350°. Generously butter & flour a bundt cake pan. Combine all of the ingredients for the filling until smooth in consistency and set aside.
  2. Spoon the filling carefully over the batter in the pan, trying to keep it centered and away from the edges of the pan. Top with the remaining carrot batter.
  3. Bake for 1 hour or until the cake bounces back when lightly touched. Allow to cool completely. Mix frosting ingredients until smooth in consistency and spoon over cake. If you find you need to thicken the frosting you can add a bit more sugar and/or refrigerate.
