Roxie’s Recipes (for the lazy cook)

French toast takes a bit of a tropical twist in this easy favorite. Roxie says it’s easy to make…but don’t tell that to Miss Sandra!

Since I like to make this one fairly often, I keep cream of coconut and coconut shavings on hand, but these are the two items you will most likely need to pick up. (Hint: try looking for the cream of coconut in the liquor section of your favorite grocery store.) You can use regular cream cheese, but I prefer the lighter texture of whipped cream cheese.

– 3 slices thick white bread or Texas toast
– 1 egg, well beaten
– ½ tsp vanilla

Toppings:
– ½ banana, sliced
– powdered sugar, sifted

For the cream cheese drizzle:
– ¼ cup whippped cream cheese
– ¼ tsp vanilla

– splash of milk
– 1 tsp cream of coconut



– ¼ cup coconut shavings
– cream cheese drizzle (see below)


– 2 tbs butter
– ¼ cup powdered sugar

  • Combine the egg, milk, cream of coconut and vanilla in a shallow bowl. Use a whisk to get a nice fluffy texture.
  • Prepare your toppings before you start grilling the toast so that you can add and serve quickly.
  • For the cream cheese drizzle, melt the butter slightly and then add the cream cheese and vanilla. Slowly add your powdered sugar until you get the desired sweetness (yes, you must taste several times – such a hardship…) Mix well to get a nice creamy texture.
  • Saturate your bread in the egg mixture and then grill until nicely brown on both sides. Slice into halves and top with sifted powdered sugar, cream cheese drizzle (throw the drizzle in the microwave for about 20 second to make it easier to pour), sliced bananas and coconut shavings.
  • Shown here served with heated maple syrup, sausage links and preferably a nice macademia nut coffee.
