Roxie’s Recipes (for the Lazy Cook)

Even if you are “on the road” as Linda and I are at the moment, it’s still possible to get creative with the occasional treat if you have access to a grill or hotplate (or even a microwave) and a small freezer. Linda couldn’t decide whether she wanted cake or strawberry sherbert, so I whipped up this concoction for her.

  • frozen pound cake (or make from a mix if you have access to an oven)
  • strawberry ice cream, small container
  • whipped cream, canned or freshly made
  • fresh or frozen strawberries
  1. Set the ice cream out to defrost slightly so you can spread it easier.
  2. Ideally, I like to do this with a frying pan or griddle. Slice pieces of poundcake to about ¼” thickness. Add some butter to your pan or griddle and lightly brown the pound cake on both sides. If you only have access to a microwave, then heat the slices for no more than 30 seconds.
  3. Layer the slices with the ice cream in a small rectangular pan or dish. Place in freezer for at least 30 minutes to harden.
  4. In the meantime, if you have access to a kitchen and want to make fresh whipped cream, use a 2:1 ratio of whipping cream to powdered sugar and whip until stiff peaks form.
  5. Upend the cakes onto plates. Top with the whipped cream and fresh or frozen & thawed strawberries.
