Roxie’s Recipes (for the Lazy Cook)

Roxie and Linda are on a road trip right now, but I heard through the grapevine that someone’s been getting into my recipe box….

  • French roast (chuck roast), 2-3 lbs
  • 2 leeks, chopped, with greens removed
  • 1-½ cups sliced mushrooms
  • 1 cup beef broth
  • 1 can diced tomatoes (16 oz)
  • 1 tsp paprika
  • 1 tsp coriander
  • 1 tsp garlic powder
  • salt & pepper to taste
  1. Heat oil in a Dutch oven (I used extra light olive oil).
  2. Brown the roast on both sides, and then set aside.
  3. Add your prepared leeks and mushrooms to the Dutch oven and cook until vegetables start to tenderize.
  4. Add the beef broth, tomatoes, and dry ingredients. Stir and simmer for several minutes.
  5. Turn the burner down to med/low and simmer for about 2 hours. Chuck roast can be tough if not cooked long and slow, so be patient!
