Roxie’s Recipes (for the Lazy Cook)

There’s something about a grilled cheese sandwich that always seems to perk Linda up. I made this quick and easy version for her one time, and it quickly became one of her favorites.

  • 2 slices of Italian bread
  • 1 slice of gouda cheese
  • 1 slice of provolone cheese
  • 1 slice of smoky cheddar cheese
  • 2 slices of tomato
  • 1 tbsp butter, softened
  • 1 tbsp pesto spread
  • ½ tbsp garlic spread
  1. In a small bowl, combine the butter, pesto and garlic spreads. Spread thinly on both sides of two pieces of Italian bread.
  2. Even when using a non-stick pan, I like to add just a pinch of butter to the pan prior to placing the slices in the skillet. Layer the gouda, provolone, tomato and smokey cheddar on one slice.
  3. Top with the second slice and flip several times to grill thoroughly on both sides. I like to also throw a lid on the skillet briefly to add in melting the cheese.
  4. This one goes great with an easy tomato soup. Look for that recipe next week….
