Roxie’s Recipes (for the Lazy Cook)

Leftover ham is incorporated into this simple batter to make a quick and easy anytime snack. Serve by themselves or with a green salad.

  • 1/3 cup flour
  • 1/3 cup water
  • 1 egg, beaten
  • 1/3 tsp baking powder
  • 1 cup diced ham
  • 1/4 cup green onion, diced
  1. In a medium bowl, gradually add water to the flour, stirring until you get a smooth consistency. Add the egg and baking powder.
  2. In a lightly oiled skillet, fry the diced ham with a dash of seasoning, then add the green onion and continue to cook until slightly browned. Add the ham and onion to your batter.
  3. Pour a shallow layer of oil into your skillet (I like to use extra light olive oil) and allow it to heat up. Once the oil is hot, drop spoonfuls of your ham batter mix into the oil and fry on both sides until nicely browned. Remove to a paper towel to blot excess oil and then serve.
