Roxie’s Recipes (for the Lazy Cook)
This week, Roxie brings us an unusual use for a banana.
For tonights SEASON FINALE, I present what I consider to be the ultimate lazy cook recipe. When I first heard about it, I was so incredulous that I had to make it just to prove it didn’t work. Well, it has now become one of my favorite easy recipes. Here it is:
- pork shoulder roast
- 1 banana, whole and unpeeled
- Place the pork roast and the unpeeled banana in a slow cooker. Do not add any seasonings or liquids.
- Cook on high until the pork is fork-tender – this will take several hours, so start early.
- Pull out the whole blackened banana and throw it away. That’s it!
One of the things I like best about this recipe is its versatility. My favorite way to serve this is on slider rolls with some Carolina barbeque sauce, a slice of smoky cheddar and coleslaw on the side (recipe below). Other variations shown are 1) on a full-size roll with the coleslaw added to the sandwich; 2) as a mini-burrito with beans and shredded cheese; and 3) fried with brown rice, spinach and green onions. For the coleslaw
- ½ cup red onion
- 1 cup carrots
- Romaine lettuce, finely chopped (yes, I know it’s usually made with cabbage – I prefer it this way)
- Store-bought coleslaw dressing
