Roxies Recipes (for the Lazy Cook)
Roxie is serving up a mouth-watering, literally to-die-for breakfast up at the Harridge place. Why drive all the way into Tonopah when you can get the best right here in town?
Well, today was a bit of a scramble. I had planned to make some beautiful puff pastries, but they require a lot of rolling and turning the dough, followed by more rolling. Unfortunately, I searched high and low for my heavy marble rolling pin this morning, and it was nowhere to be found. Thus, I went with a much easier marmalade-filled turnover recipe.
- 4 oz butter
- 4 oz cream cheese
- 1 cup flour
- 1/3 cup marmalade
- Soften the butter and the cream cheese, then combine. Slowly add the flour and work until well combined.
- Form the mixture into a ball, wrap in cellophane and refrigerate for an hour.
- Transfer your dough to a lightly floured working surface and flatten to about 1/8” thickness (ideally with a rolling pin). Cut into circles about 2-1/2” in diameter.
- Spoon 1/2 teaspoon marmelade in the middle of each circle. Fold the pastry over and seal the edges. Cut several slits in the top of each turnover to allow steam to escape. Place about 2” apart on a baking sheet. I added a quick eggwash (beaten egg) to get that nice golden finish.
- Bake at 350° for roughly 13 minutes, turning over halfway through, on until lightly browned.
